Artichokes & Aioli

Ingredients

  • 1 green artichoke

  • 1 lemon (for boiling and juice)

  • 2 tbsp olive oil

  • 1/2 cup fresh parsley, chopped

  • Salt and pepper, to taste

  • 2 garlic cloves

  • 1 egg yolk

  • 1 tsp Dijon mustard


Instructions

Preparing the Artichoke

  1. Cut the stem of the artichoke and remove 1 inch from the top.

  2. If using a green artichoke, use kitchen shears to trim the thorns off the leaves.

  3. Place the artichoke upside down in boiling water with lemon juice for 15 minutes.

Making the Parsley Mixture

  1. In a bowl, combine olive oil, lemon juice, chopped parsley, salt, and pepper. Set aside.

Finishing the Artichokes

  1. Check if the artichokes are cooked through by pulling a leaf; it should come out easily.

  2. Remove the artichokes from the water, cut them in half, and remove the hairy center.

  3. Cover the artichokes with the prepared parsley mixture.

  4. (Optional) Sear the artichokes on medium-high heat for a few minutes for added flavor.

Making the Aioli

  1. In a bowl, combine Dijon mustard, lemon juice, olive oil, 2 garlic cloves (minced), 1 egg yolk, salt, and pepper. Whisk until smooth and well combined.
