Strawberry Rhubarb Jam 🍓

Ingredients

2 cups strawberries
1 cup rhubarb
3 dates
Juice of half a lemon
Instructions
Wash the strawberries and remove the stems. Cut them into halves or quarters depending on their size.
Wash the rhubarb and chop it into small pieces.
In a medium saucepan, combine the strawberries, rhubarb, and chopped dates.
Add the juice of half a lemon to the mixture.
Cook over medium heat, stirring occasionally, until the fruit breaks down and the mixture thickens (about 15-20 minutes).
Once thickened, remove from heat and let it cool slightly.
Transfer the jam to a clean jar and let it cool completely before sealing.
Store in the refrigerator for up to two weeks or process for longer shelf life.
