Strawberry Rhubarb Jam 🍓

Ingredients

  • 2 cups strawberries

  • 1 cup rhubarb

  • 3 dates

  • Juice of half a lemon


Instructions

  1. Wash the strawberries and remove the stems. Cut them into halves or quarters depending on their size.

  2. Wash the rhubarb and chop it into small pieces.

  3. In a medium saucepan, combine the strawberries, rhubarb, and chopped dates.

  4. Add the juice of half a lemon to the mixture.

  5. Cook over medium heat, stirring occasionally, until the fruit breaks down and the mixture thickens (about 15-20 minutes).

  6. Once thickened, remove from heat and let it cool slightly.

  7. Transfer the jam to a clean jar and let it cool completely before sealing.

  8. Store in the refrigerator for up to two weeks or process for longer shelf life.
