Carrot Top Green Goddess Salad

Ingredients

  • Asparagus

  • Snap peas

  • Radish

  • Feta cheese

  • Rotisserie chicken


For the Carrot Top Green Goddess Dressing

  • 1 bunch carrot tops

  • 1 cup mixed herbs (such as green goddess herbs and dill)

  • Juice of half a lemon

  • 2 cloves garlic

  • 1/3 cup olive oil

  • 1/2 cup plain yogurt

  • 1 teaspoon salt


Instructions

  1. Prepare the vegetables: Trim the asparagus and snap peas, and slice the radish.

  2. Shred the rotisserie chicken into bite-sized pieces.

  3. In a blender or food processor, combine the carrot tops, mixed herbs, lemon juice, garlic, olive oil, yogurt, and salt. Blend until smooth.

  4. In a large bowl, combine the asparagus, snap peas, radish, feta, and shredded chicken.

  5. Drizzle the Carrot Top Green Goddess Dressing over the salad and toss to combine.
