Baked Fish Tacos

Ingredients:
For the Fish


12 oz cod
2-3 tbsp blackened seasoning (or a mix of salt, pepper, paprika, garlic powder, and cayenne)
For the Snap Pea Slaw
1 cup snap peas
3 radishes, thinly sliced
2 tbsp olive oil
Juice of half a lime
1 tsp salt
For the Tartar Sauce
1/2 cup Greek yogurt
1/4 cup pickles and a splash of pickle juice
1 tbsp Dijon mustard
1 tbsp dill
Juice of half a lemon
Instructions
Preheat the oven to 400°F (200°C).
Season the cod with the blackened seasoning.
Place the cod on a baking sheet and bake for 10 minutes or until cooked through.
While the fish is baking, prepare the snap pea slaw by combining snap peas, radishes, olive oil, lime juice, and salt in a bowl. Toss to combine.
For the tartar sauce, mix the Greek yogurt, pickles, pickle juice, Dijon mustard, dill, and lemon juice in a separate bowl until well combined.
Once the fish is done, assemble the tacos by placing the baked fish, snap pea slaw, and tartar sauce onto toasted tortillas.
