Beer Battered Chicken Milanese

Ingredients
Batter

1 (14.9 oz) Guinness draught stout
2 cups flour
2 tbsp cornstarch
1 tbsp baking powder
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1 tsp paprika
Chicken
1 lb chicken
Salad
4 cups arugula
1 orange, peeled and sliced
1/4 red onion, thinly sliced
Dressing
2 tbsp olive oil
Juice of 1 lemon
1 tsp Dijon mustard
1 tsp maple syrup
Instructions
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, pepper, garlic powder, and paprika.
Slowly whisk in the Guinness stout until the batter is smooth and well combined. Set aside.
Heat oil in a deep skillet or fryer over medium-high heat.
Dip the chicken pieces into the batter, allowing any excess to drip off, then carefully place them in the hot oil.
Fry the chicken until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.
In a large bowl, combine arugula, orange slices, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, and maple syrup to make the dressing.
Drizzle the dressing over the salad and toss gently to combine.
