CITRUS OLIVE OIL CAKE

INGREDIENTS:

  • 1 cup sugar

  • Zest of one orange

  • Zest of one lemon

  • 2 eggs

  • 1/2 cup greek yogurt

  • Juice of half the orange

  • 3/4 cup olive oil

  • 1 1/2 cup flour

  • 1 tsp baking powder

  • 1 tsp salt


Simple syrup: heat 1/2 cup sugar and 1/4 cup water until sugar is dissolved


INSTRUCTIONS:

1. Preheat your oven to 350°F (175°C). Line a 9x5 loaf pan with parchment paper, leaving an overhang for easy removal.


2. Combine Sugar and Zest: In a large mixing bowl, whisk together the granulated sugar, orange zest, and lemon zest. Rub the zest into the sugar with your fingertips. This releases the fragrant oils and intensifies the citrus tlavor.


3. Whisk in Eggs: Add the eggs to the sugar mixture and whisk until light and pale yellow.


4. Add Yogurt and Juice: Stir in the Greek yogurt and orange juice until just combined.


5. Emulsify with Olive Oil: Gradually whisk in the olive oil until the batter is smooth and emulsified.


6. Whisk Dry Ingredients: In a separate medium bowl, whisk together the flour, baking powder, and salt.


7. Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix, as this can lead to a tough cake.


8. Add lemon and orange slices to the lined loaf pan, then add simple syrup, then loaf batter. Bake at 350 for 50 mins or until toothpick comes out clean.


Let cool completely before flipping onto serving plate. Enjoy!
