Lemon Salmon

Ingredients:

2 5-oz salmon filets

1 lemon

1 orange

3 tbsp olive oil

1 tbsp lemon juice

1 tbsp minced garlic

1/2 cup finely chopped cilantro*

1 tbsp maple syrup

1 tsp chili powder

salt and pepper to taste (about 1 tsp each)

1/4 cup pomegranate seeds (optional)


Instructions:

  1. Preheat oven to 425. Line a baking sheet with parchment paper.

  1. Slice lemon and orange into 1/4 inch pieces. In the middle of the baking sheet, lay citrus slices in a single layer. Place salmon filets on top of the lemon and orange slices.

  2. Make the salmon marinade by adding the olive oil, lemon juice, garlic, cilantro, maple syrup, and spices to a small bowl. Stir until combined.

  3. Spoon the marinade on the salmon filets and spread evenly.

  4. Bake the salmon for 12-13 minutes. Since cooking time can vary, check the fish after 10 minutes. Bake for another 2-3 minutes if necessary. Keep in mind the fish will continue to cook out of the oven.

  5. After cooking, add pomegranate seeds if desired. Serving recommendations: green beans and potatoes, or couscous and salad.
